There is not much special about installing Zope on Mac OS X. You should have at least a passing familiarity with using the Terminal, since Zope is a Unix application and needs some Unix skills to be administrated.
On some editions of Mac OS X you can use the default python install to run some Zope versions. For example Mac OS X 10.4 with Python 2.3.5 built in matches Zope 2.8. On others you will have to build or install a separate Python version. You do need to install Apple's Developer Tools to install Python and Zope from source.
In the past some people have provided installers for a couple of Zope versions. The trouble with these is that they get outdated fast. It's much easier to follow the usual instructions for Unix installations.
Fitness for use as a production server:
Using Mac OS X or even Mac OS X Server for a Zope production server is a reasonable choice. It's a reliable platform for running Zope in production and you don't have to expect any surprises, even though Linux seems to be more common amongst Zope developers.
A mailing list and portal focusing on Zope on OS X had been created by Silicon Prairie Ventures. These links do not seem to work currently (March 2006).
